Buffalo Park Class

Class meets Mon, Wed, Fri 9:15AM at the Ramada in Buffalo Park. Every Stroller Strides class is a TOTAL body workout including, cardio, strength training, balance and flexibility. All you need to bring is a mat/towel, water, sunscreen and snacks for your baby!

As part of the Luna Moms Club "Moms with a Mission" program we complete quarterly community service programs. So far this year we've raised $3,000 for Girls on the Run and $1,500 for the March of Dimes!

It can be lonely and overwhelming being a new (or even an 'old') mom- with Stroller Strides you're not alone. Come meet other moms in Flagstaff and take some time out for yourself, with your kids. We've all been there and love to help!

Quick & Easy Salad

I'm not sure about any of you, but I am on a serious non-rice, grain kick lately. My two newest favorites are barley and quinoa (keen- wah). I usually buy just what I need in the bulk section at New Frontiers & find that to be the easiest and most affordable way to do it- unless you're at Trader Joes where they sell boxes of quinoa for cheap.. Ahhhh Trader Joes...but thats a whole different post back to the recipe for this week:

Red Quinoa and Black Bean Salad
Makes 4 servings (about 1 cup/serving)

1 c red or regular dry quinoa
2 c water
1 can (rinsed & drained) black beans
2/3 c salsa
2 green onions, thinly sliced
3 tbl cilantro
2 tbs grated soy cheese (I usually skip this or add 'real' cheese)

Add quinoa to 2 cups water & bring to a boil. Reduce heat, cover and simmer until all water is absorbed (10-15min).
Place cooked quinoa in a med-sized bowl: add salsa, black beans & gently mix. Garnish with green onions, cilantro & cheese.

264 cal, 3g fat, 12g protein, 48g carbs, 8.4g fiber

personal note: I usually add some cumin & lime juice, but thats just my taste..

This is a great summer salad, but also great when you're in a hurry- no matter the weather!!
