Red- Meatless Meal

Posted by Beth On 10:41 PM
As promised.
My mom sent me this from an article about eating on the cheap that she found in the Boston Globe. The 'recipe' isn't too firm- but here are the ingredients & what directions I have.
Mine didn't look like this-
it was more of a tostada b/c it was baked & crispy!

Sweet Potato "Burritos" (It is a Boston recipe- they aren't too on top of what makes a burrito)
- 1-2 cans of black beans
- Sweet potatoes (tonight, we used butternut squash b/c it's what we had)
- cumin, cinnamon, unsweetened cocoa powder, chili powder
- chopped garlic
- chopped onion

- grated cheese

- flour tortillas

Mix beans, spices, onions & garlic. Layer with mashed sweet potato on a flour tortilla, sprinkle with cheese & bake.

We had it tonight and it was really good & filling (seriously- my husband can eat 1/2 a lasagna in one sitting- easily- and he only had one burrito & some salad). Quick & easy to make!!! Try it!
