It's a big word. Hard to really grasp- basically being thankful. Challenge yourself to find things you're thankful for (besides the "easy" ones of health, family, home etc.) I love the facebook challenge some moms have been doing of saying 1 thing they are grateful for every day for the whole month of Nov., not just around the turkey-day table.
One of the things I am most grateful for is you- all my Stroller Strides & Fit4Baby moms- you guys make me happy every day that I see your smiling faces at the start of class. I love my time with you all- and I love watching you grow as athletes and as moms. I'm glad for the friendships both Lily and I have found as a result of this program.
So THANK YOU!
There are a TON of healthy eating tips out there in cyberspace- here are my favorite (and I think the easiest to follow).
1. Drink Plenty of Water
2. Eat Slowly
3. Don't skip your normal meals
4. Eat the 'special' stuff (skip the everyday & go for the pie)
5. No Seconds
6. Skip the hors d'ouveres
Basically, I go between trying to treat Thanksgiving as just another day and treating it as a once a year special occasion (read: eating free-f0r-all). The best way to do the former is to make sure you give yourself at least one treat so you don't feel cheated, and the latter- make sure you exercise in the morning and don't let the Thanksgiving free-for-all mark the start of the "holiday free-for-all".
I like the advice this website gives because it kind of toes the line- go a little crazy, but not too crazy. Do what feels right & celebrate your friends & family.
I HIGHLY recommend getting some exercise in before eating (and it's always nice to take a post-turkey walk).
If you're in Flagstaff tomorrow- join NATRA for a run in the morning- they will meet at Flagstaff Middle School parking lot at 9AM, run to Buffalo Park & complete the Turkey Trot up there. OR just meet at Buffalo Park at 9:30AM & trot like a turkey for 2 miles!
1. Only burn dry seasoned hardwoods like oak, hickory, and ash.
2. Avoid soft woods like pine and cedar.
3. Avoid wet wood and any treated or painted wood.
4. Never burn plastics, cardboard, garbage, magazines, etc.
Stir-Fried Chicken Salad (from cookinglight.com)
Ingredients
• 1/4 cup fat-free, less-sodium chicken broth
• 2 tablespoons rice wine vinegar
• 1 tablespoon Thai fish sauce
• 1 tablespoon low-sodium soy sauce
• 1 tablespoon bottled chopped garlic
• 2 teaspoons sugar
• 1 pound skinless, boneless chicken breast tenders
• 1 tablespoon peanut oil
• 4 cups mixed salad greens
• 1/4 cup chopped fresh basil
• 1/2 cup thinly sliced red onion
• 2 tablespoons finely chopped unsalted, dry-roasted peanuts
• Lime wedges (optional)
Preparation
Combine first 6 ingredients in a medium bowl. Add chicken to broth mixture, stirring to coat. Let stand 3 minutes.
Heat oil in a large nonstick skillet over medium-high heat. Drain chicken, reserving marinade. Add chicken to the pan; cook 4 minutes or until done, stirring frequently. Stir in the reserved marinade. Reduce heat; cook 1 minute or until slightly thickened. Remove pan from heat.
Combine greens and basil in a large bowl. Add chicken mixture, tossing to coat. Place 1 1/4 cups salad mixture on each of 4 plates. Top each serving with 2 tablespoons onion and 1 1/2 teaspoons peanuts. Serve immediately. Serve with lime wedges, if desired.

Chicken & Sweet Potato Stew
Prep Time: 20 minutes
Cook Time: 5 hours
Total Time: 5 hours 20 minutes
Makes 6 servings
Ingredients
6 bone-in chicken thighs, skin removed, trimmed of fat
2 pounds sweet potatoes, peeled and cut into spears
1/2 pound white button mushrooms, thinly sliced
6 large shallots, peeled and halved
4 cloves garlic, peeled
1 cup dry white wine
2 teaspoons chopped fresh rosemary, or 1/2 teaspoon dried rosemary, crushed
1 teaspoon sea salt
1/2 teaspoon freshly ground pepper
1 1/2 tablespoons white-wine vinegar
Directions,
1. Place chicken, sweet potatoes, mushrooms, shallots, garlic, wine, rosemary, salt and pepper in a 6-quart slow cooker; stir to combine. Put the lid on and cook on low until the potatoes are tender, about 5 hours. Before serving, remove bones from the chicken, if desired, and stir in vinegar.
**You can freeze this stew for up to 1 month.

So, I explored my options. The pool of legitimate "work-at-home" jobs is very, very, very tiny- so I agreed to keep teaching- part-time. When that job evaporated after a year, I found myself in a bit of a panic & suddenly remembered an email I received months before. In that email old friends from college who were living in San Diego were talking about this great fitness class they were part of called, Stroller Strides. I immediately searched for a class here in Flagstaff & when I found out there were none- I decided to start one!
I knew from the instant I explored the Stroller Strides website & talked to the franchise team that I was in- it wasn't until much later that I actually started comparing Stroller Strides to other stroller fitness franchises and talking to franchisees in similar markets. I did all this way after the fact, I knew from the moment I read about Stroller Strides that it was what I was going to do (which is why it is a decision I never made- it was made for me).
Owning my own business has been beyond eye-opening. I have learned, through many mistakes & lots of trial & error, SO much about myself and what I am capable of. I have acquired countless new skills and impressed myself with all that I've done in a year.
The best part of Stroller Strides & owning my own business is getting to hang out with my daughter all the time, while still maintaining my own sense of self. It is so easy to get lost in the world of mommy-hood and not stretching your mind to think past milestones, sleep schedules and toy organization. My daughter and I have made such great friends through Stroller Strides class, I've been able to contribute financially to my household and every time I hear a mom say "Stroller Strides saved me", I know that all the hard work is more than worth it.

Stroller Strides moves to it's indoor location tomorrow!
We will meet at the NAU Skydome (S. San Francisco St) MWF at 9:15 and Tue/Thurs at 10:15.
When the weather is nice; we may hold class outside- so be prepared.
Meeting Location:
Enter the Dome by the lumberjack/ticket offices & we will be at the open area to the right of the gift shop.
Parking:
I park in the main Skydome lot. This is a permitted lot, so park at your own risk. If you do not want to risk the ticket, park across the street at the Kiwanis Park.
